About Mr. Shuei Pig's Knuckles
Mr. Shuei Pig's Knuckles is one of Taichung's best-known pig knuckle restaurants, with nearly 50 years of history. The knuckles are braised in soy sauce and garlic for a rich flavor. Only front trotters are used, and the skin is glossy and chewy, the meat soft and tender, and full of collagen. The thin noodles are also a highlight: smooth, in a light, slightly sweet broth, and even better with a braised egg. Other signature dishes include pork chop rice, bitter melon with pork ribs and braised snacks (lu wei).
The Taichung Park branch is the main restaurant, at No. 1, Gongyuan Road in the Central District, close to Taichung Station. The interior has a classic Taiwanese feel, and the counter looks like a cha chaan teng from a Hong Kong film. It is open from 11:00 AM to 7:45 PM and is busy every day, sometimes with a queue.
The restaurant is well known in Taichung and has been featured on TV, in magazines and on blogs. It also offers delivery and home shipping.
If you like pig knuckles or want to try traditional Taiwanese braised food, this long-running restaurant is a good place to do it.
